The DISSCO Stainless Steel Dough Scraper is made from 0.7 thickness, so it is flexible enough to lift your dough cleanly from most surfaces.
Works well with our Stainless Steel Pastry sheets, available in 3 thicknesses 0.7, 0.9 and 1.2mm thick. At a generous 24 x 18 inches (609 x 457mm) these are big enough for virtually any job and with the downturn at the front and corresponding upturn at the rear the sheet stays in place and so will the dough.
0.7 is great for most purposes however if you do a lot of dough dividing then 0.9 thickness is for you and if you are into chopping then perhaps you need the 1.2 thickness.
Supplied in a mirror finish with a protective film to be removed before first use, the top side is for kneading and rolling. The back side has some marking from our machinery when made so turn it over and rotate to use the back side for cutting and dividing as required.
